Yucca crisps (Cassava, yuca, tapioca) – Caribbean
Serves 4
1. Peel the yucca and cut in slices using a sharp knife or mandolin. Slices should be about 1/8 in (3 mm) wide or smaller
2. Put some oil in a skillet with high walls, and heat
3. Once the oil is hot, put the yucca slices in the oil one by one. Make sure that all the slices are completely immersed in the oil
4. Once the edges of the slices turn a golden brown, they are ready
5. Using a slotted spoon, remove them from the frying bath and place them on a paper towel in a plate
6. Sprinkle with salt
7. Enjoy!
