Ingredients

  • 4 eggs
  • 1 tbsp fish sauce
  • 3 scallions thinly sliced
  • Half red tomato sliced
  • 2 tbsp vegetable oil

Directions

1. In a small bowl, beat together eggs fish sauce scallions and tomatoes.

2. In a large skillet, heat oil over high heat. Cook for 1 or 2 minutes until lightly brown; flip the omelet to the other side.

3. Transfer to a serving plate ans serve with rice.
