Serves 2-3
1. Bring large pot of water to boil. Add rice noodles; cook 3 to 5 minutes or until noodles are tender but firm. Rinse under cold water; drain well. Set aside.
2. Heat oil in large skillet or wok on medium-high heat. Add pork; stir fry 3 to 5 minutes until browned and cooked through. Drain pork.
3. Place pork in large serving bowl. Add chili sauce, cilantro and mint; toss to mix well. Add noodles; toss to coat well. Serve warm or at room temperature.
