Serves 6
1. Combine all the ingredients in a large pan.
2. Bring just to a boil and cook, stirring constantly, until the sugar dissolves.
3. Continue cooking until the sugar begins to caremelize then take the pan off the heat.
4. Continue beating the mixture so that the caramel evenly coats the peanuts.
5. Continue stirring until the sugar crystallizes to a fine powder.
6. Return to the heat and continue cooking until the caramel reaches your preferred colour.
7. Stir to ensure that the peanuts do not clump together then turn out onto a sheet of greaseproof (waxed) paper, spreading the nuts out evenly.
8. Allow to cool, then break apart and store in an air-tight jar.
