Cape-Verde
Serves 4
1. Mix together the salt, garlic, vinegar, bayleaf, black pepper and chilli and use to marinate the meat over night.
2. Add the oil and onions to a large pot and fry until soft then add the meat and marinade and simmer gently until the meat is done.
3. Add the chopped vegetables and cover with water.
4. Bring to a boil, reduce to a simmer and cook for about 40 minutes, until the vegetables are done.
5. Season with salt, paprika and pepper and serve.
