Serves 4-5
1. Mix salt with flour and rub onto the fish.
2. Saute fish in oil until lightly browned.
3. Remove and set aside.
4. Saute onion in same pan for 5 minutes.
5. Add tomatoes and saute for 5 minutes.
6. Add tomato paste, red pepper and broth.
7. Bring to simmer and cook for 25 minutes.
8. Return fish to the sauce and bring back to a serving temperature.
9. Serve fish topped with sauce, sprinkled with mint.
