Serves 4
1. Break the eggs in a bowl and beat until frothy.
2. Gradually stir-in the eggs, whisking all the while then add the ground mace and vanilla extract.
3. Sift the flour and salt into the bowl and fold in to combine.
4. Grease a baking tray and drop the batter by the tablespoon onto this, forming heaped mounds, ensuring you leave at least 5cm between each biscuit.
5. Transfer to an oven pre-heated to 160°C and bake for about 20 minutes, or until the edges of the biscuits are lightly browned.
6. Proper panlevi will have a crunchy outside and a chewy centre.
