Serves 4
1. Heat the oil in a pan and stir-fry the onion until soft and golden brown.
2. Add the garlic and prawns and stir-fry for 3 minutes before adding the salt, lemon juice, tomatoes, parsley, cayenne pepper, black pepper and coconut milk.
3. Simmer for about 12 minutes and serve over rice.
4. As a variant you can add cubed firm white fish to the Moqueca (add along with the coconut milk).
