Serves 2-4
1. Place eggplant in water with salt.
2. Simmer for 10 minutes.
3. Drain and set aside.
4. Saute onions and peppers in oil for 10 minutes.
5. Add tomatoes and simmer for 5 minutes.
6. Sprinkle shrimp with salt.
7. Let stand for 10 minutes.
8. Add shrimp and 1 cup water to the pot.
9. Simmer until shrimp are done.
10. Add ginger and tomato paste.
11. Stir well, add eggplant and simmer for 5 minutes.
12. Sprinkle with parsley and serve with rice.
