Serves 6
1. Halve the peppers and remove the seeds and membranes. Rub the skin with oil then arrange them, cut side down, on a baking tray. Transfer to an oven pre-heated to 200°C and bake for between 6 and 10 minutes, or until the peppers look shrunken. Remove from the oven and set aside to cool.
2. In a bowl, mix together the vinegar, oil, garlic, parsley, salt and black pepper.
3. Pour this sauce over the peppers then drizzle over a little lemon juice.
4. Allow the peppers to mature for 2 hours at room temperature before serving.
