Ingredients

  • 100g butter
  • 250g sugar
  • 2 medium eggs
  • 400g flour
  • 3 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 400g cooked pumpkin
  • 180ml milk
  • 1/2 tsp baking soda

Directions

1. Cream the butter and sugar together until light and fluffy then add the eggs one by one and mix in.

2. Mix the dry ingredients together in a separate bowl.

3. Add the pumpkin, soda and milk and blend well.

4. Add this blended mixture to the sugar, butter and egg mixture.

5. Mix well then whisk rapidly.

6. Pour into a 30 x 22 cm pan and bake in an oven pre-heated to 170°C for 25 minutes, or until done.
