Prawn ocopa- Peru
Serves 4
1. Bring a pan of water to a boil. Add the potatoes and parboil for 20 minutes, or until just tender.
2. Add the prawns to another pan of boiling water. Cook for about 5 minutes, or until just pink then drain and peel (scoop the intense red coral from the heads and place in a bowl).
3. Heat a little oil in a pan, add the garlic, onions and chopped chillies. Fry for about 6 minutes, or until golden brown. Turn this mixture into a blender. Pulse to chop then crumble in the vanilla wafers and add the grated cheese and the milk along with the peanuts. Process to a sauce-like consistency.
4. Drain and peel the potatoes then mash and mix with the prawns and the prawn coral. Shape into patties and fry until lightly browned.
5. Season the sauce with salt, black pepper and oil to taste. Arrange the prawn ocopa on a serving plate, pour over the sauce and serve. If desired, you can garnish with halved hard-boiled eggs.
