Serves 8
1. Wash, quarter, and slice lemons very, very thin and place in a bowl. Cover with sugar. Let stand at least 2 hours.
2. Lightly beat eggs. Mix with lemon and sugar. Pour into prepared piecrust.
3. Cover with second crust. Bake in 450° oven for 15 minutes. Reduce heat to 375° and bake 25 minutes more.
4. Serve with ice cream, whipped cream or plain.
