Serves 2
1. Mix a little milk with the plantain flour and sugar to make paste
2. Boil the remainder of the milk and stir. Pour onto the plantain flour and stir.
3. Pour back into the pan and boil again for 10 minutes, stirring constantly. Add the lime peel.
4. Pour into a wet pudding pan and leave until set.
5. Serve on a glass dish.
