Pineapple beignets – Recipe from Ivory Coast
Serves 2-4
1. Pour the pineapple juice in a bowl. Mix in the sugar until it melts completely
2. Add the food coloring and baking soda. Keep mixing and incorporate the flour and room-temperature butter
3. Knead the dough until smooth and let it rest 20mn
4. Form little balls with the dough and fry them in hot oil, about 5 mn per doughnut
