Pastelillos de Carne Picadillo – Puerto Rico
1. In a skillet, heat oil on medium.
2. Stir in beef and cook until browned.
3. Stir in remaining ingredients, except discos and frying oil.
4. Lower heat and simmer for 15 minutes or until mixture thickens.
5. Spoon about 1 tbsp. meat mixture into middle of each disco, fold over; moisten edges and seal with a fork.
6. Heat 2½ inches of oil in a deep saucepan on medium. Cook empanadas in batches, until they turn brown on both sides.
7. Drain on paper towels.
