Ingredients

  • 2 lbs of potatoes
  • 4 tbsp of vegetable oil
  • ½ lbs of beef
  • ½ cup of onion
  • 3 cloves of garlic
  • 1 tsp of cumin
  • 1 tsp of oregano
  • 2 tbsp of parsley
  • 1 tsp of paprika
  • 2 tbsp of hot yellow pepper paste
  • Salt

Serves 8

Directions

1. Soak the cut up ollucos in water for 60 minutes.

2. In a pan, heat up the vegetable oil. Once it is hot, fry the beef until it is cooked through. Then set it aside.

3. Using the same hot oil, fry the onion and the garlic. Fry until they are translucent.

4. Add the paprika, oregano, cumin, and aji panca with salt and proceed to cook for 3-4 more minutes.

5. Drain the potatoes and put them in the pan with the rest of the ingredients along with the beef. Cover the pan and continue to cook at low-heat. Keep cooking until the potatoes are soft. This should take about 20 minutes. Stir the contents of the pan a few times.

6. Garnish the finish product with the chopped parsley and serve with a side of white rice.
