Serves 4
1. Slice and de-seed the tomatoes then purée in a blender then set aside.
2. Combine the meat, stock cubes, thyme and 1 onion in a bowl.
3. Turn into a pan and cook gently until the meat is done (the meat will release enough liquid to cook itself in, but if it looks dry, add a little water).
4. Add the tomato purée to a second pan, bring to a simmer and cook, stirring frequently, until almost dry.
5. Stir in the vegetable oil and the remaining onion and cook over low heat until almost dry (the point at which the tomato mix begins to stick to the base of the pot).
6. Continue cooking until the oil begins to separate out from the tomatoes then add the cooked meat mix and season to taste with salt and ground chilli.
7. Cover the pan and allow to cook gently for 5 minutes.
8. Serve hot, accompanied by boiled rice, fried plantain, boiled plantain, bean porridge, fried yam, boiled yam or yam porridge.
