For the Dressing:
Serves 8
1. Wash the salad leaves, tomatoes, onions and lemons with water then pat dry.
2. Cut the lettuce leaves into three pieces across the width.
3. Cut the onion and tomatoes into medium-sized slices.
4. Peel the cooked sweet potatoes and dice the flesh.
5. Line your salad bowl with the greens, add the sweet potato pieces then add the tomato and onion.
6. Whisk the dressing ingredients together and pour over the salad ingredients.
