Bostwana
Serves 4-6
1. Wash and pick over the beans, place in a bowl and cover with water then set aside to soak over night.
2. The following day, place the beans in a large pan, cover with water (this should come 5cm above the beans) and add a pinch of baking soda.
3. Bring to a boil, reduce to a simmer, cover the pan and cook for about 80 minutes, or until the beans are tender.
4. While stirring constantly, add the maize meal or samp in a slow, steady, stream, ensuring that no lump forms.
5. Stir well to combine then reduce to a low simmer and cook for about 15 minutes more, or until the mixture is thick and porridge like and the maize meal no longer tastes raw.
