Directions

1. Once you have washed the fonion, place in a microwave-safe bowl.

2. Place in your microwave (1200W) and cook on full power for 5 minutes.

3. After this time, remove from the microwave and mix gently with a wooden spoon.

4. Moisten the grains with a few drops of water dripped from your hand.

5. Set aside to stand for 1 minute (so the grains can absorb the water) then stir once more and return to the microwave.

6. This time, microwave on full power for 8 minutes.

7. Remove from the microwave, allow to cool until the fonio can be handled then moisten with a little water and rub the grains between your fingers to break up any clumps.

8. Repeat the cooking moistening and rubbing process until the fonio is cooked (typically you will need three or four cycles before all the grains are tender).

9. Note that fonio is ready when any grain can be easily crushed between your fingers.

10. Just like in the traditional steam-cooked fonio recipe, once the grains are tender they can be set aside and then re-heated by cooking for 5 minutes in the microwave.
