Serves 4
1. Heat a little oil in a pan, add the onions and fry for about 5 minutes, or until translucent.
2. Now add the garlic and ginger along with the thyme, parsley and chillies.
3. Stir to combine and fry over low heat for 2 minutes before stirring in the tomatoes.
4. Season to taste with salt and black pepper and continue cooking for 5 minutes, stirring frequently, or until the tomatoes have broken down.
5. Set the sauce aside to keep warm as your cook your steaks.
6. Either fry or grill them to your desired level of done-ness.
7. Arrange on plates, drizzle with the tomato sauce and accompany with mashed sweet potatoes.
