Serves 6
1. Peel the bananas, then mash in a bowl until smooth.
2. Sift over the maize flour and work into the mashed bananas until you have a smooth, homogeneous dough.
3. Shape the dough into rough balls (about 1 tbsp each).
4. Heat oil in a large pan or deep fryer to 180°C.
5. When the oil is hot, add the banana fritters, in batches, frying until evenly browned all over and slightly crisp on the outside.
6. Remove with a slotted spoon and drain on kitchen paper as you cook the next batch.
