Ingredients

  • 10 tbsp butter
  • 40g sugar
  • 2 tbsp freshly-grated ginger (reduce if not to your taste)
  • 1 tsp ground cinnamon
  • 60ml honey
  • 1 egg
  • 180g finely-grated raw cassava
  • 450g plain flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Directions

1. In a bowl, cream together the butter and sugar until light and fluffy then blend in the ginger, cinnamon, honey and the egg before folding-in the cassava.

2. Sift together the flour, baking powder, baking soda and salt into a separate bowl then add to the butter mixture and mix thoroughly to combine.

3. Drop rounded tablespoons of the mixture onto an ungreased baking tray then place in an oven pre-heated to 170°C and bake for 7 minutes.

4. Take the biscuits out of the oven, allow to cool a little then transfer to a wire rack to cool completely before serving.
