Lemon flan
Serves 4
1. Heat together 3 tbsp sugar and 3 tbsp water until golden brown.
2. Pour into a well-buttered flan mold.
3. Beat the eggs with the remaining 3 tbsp sugar, then add the 100g sugar along with the milk, cornstarch and lemon zest.
4. Mix well and pour into the flan mold.
5. Cook in a bain-marie for 45 minutes until the flan thickens and sets.
6. Allow to cool completely then serve.
