Serves 6-8
1. Grease a cake pan (size called for on cake mix box).
2. Spread the brown sugar on the bottom.
3. Arrange pineapple slices on top of brown sugar.
4. Place maraschino cherries around pineapple.
5. Prepare a box of yellow cake mix following the directions, but replaced the water with ½ cup rum. If the cake mix box calls for 3/4 cups water, then use ½ cup rum and ¼ cup water – you can use pineapple juice instead of water).
6. Add coconut flakes, and mix according to cake mix box directions.
7. Pour the batter over the pineapple slices and cherries.
8. Bake according to cake mix box directions (350 degrees, etc).
9. When the cake is done, loosen the edges with a butter knife.
10. Allow it to rest for 5 minutes before flipping unto a serving plate.
