Moelleux au chocolat (Fudgey chocolate cake)
Cocoa only grows within a limited distance from the equator. It is probably the most universal tropical ingredient.
Serves 6-8
1. Preheat oven to 350°F (180°C, gas mark 6).
2. Melt chocolate in a saucepan with a little bit of water.
3. Remove from heat, add butter, flour and baking powder.
4. Prepare a foam with the egg yolks, the sugar and a little water. Add it to the chocolate mixture.
5. Beat the egg whites, and incorporate them into the pan gently.
6. Pour into a buttered pan with high edges, and bake for about 35 min.
7. Add powdered sugar or melted chocolate to decorate the cake.
