Guinea-Bissau
Serves 4
1. Remove the shells for the crabs then set the crabs aside.
2. Pour the coconut milk into a pan, season with salt then bring to a boil.
3. Reduce to a simmer and cook the coconut milk until thick enough to coat the back of a spoon.
4. Take off the heat and set aside to cool.
5. Season the crabs with salt and lemon juice.
6. Place on a pre-heated barbecue and cook for about 30 minutes, or until done through.
7. Whilst cooking, baste the crabs with the thickened coconut milk, so that they develop a thick coating.
