Ingredients

  • 900g goat meat
  • 1 tsp tomato paste
  • 2l water
  • Salt and pepper to taste
  • 3 fresh tomatoes, chopped
  • 2 medium onions, sliced
  • 2 stock cubes
  • 6 hot chilli peppers (eg Scotch Bonnet)

Directions

1. Cut the goat meat into cubes about 5cm (2 in) square, wash well and season with salt and black pepper.

2. Pound 1/2 onion the chillies and cubes together in a pestle and mortar and use this to marinate the meat for at least 30 minutes.

3. Add the water to a pot, bring to a boil then add the meat, onions, tomato paste and fresh tomatoes.

4. Boil for 20 minutes then reduce to a simmer and cook until the meat becomes tender (about 60 minutes).

5. Serve on a bed of rice.
