Ingredients

  • 2 tbsp cooking oil
  • 2 medium onions, quartered
  • 500g stewing beef, cut into bite-sized pieces (chicken can also be used)
  • 2 hot chillies, chopped
  • 2 tomatoes, chopped
  • 100ml tomato purée
  • 1 tsp dried thyme, crumbled
  • 1 tsp hot curry powder
  • Salt and freshly-ground black pepper, to taste

Directions

1. Heat the oil in a large pan, add the onions and fry for a few minutes, until just translucent.

2. Add the beef and fry gently to colour then add enough water to cover.

3. Bring the mixture to a boil, reduce to a simmer and cook for about 60 minutes, or until the meat is almost tender.

4. Reduce the heat to a low simmer and add all the remaining ingredients.

5. Stir thoroughly to combine then continue simmering for a further 30 minutes.

6. Serve hot on a bed of rice.
