Ghana
Serves 4
1. Grind the peanuts to a fine powder in a coffee grinder (you will probably have to do this in batches).
2. In the meantime, sift the salt and flour into a bowl.
3. Combine the margarine (or butter) and icing sugar in another bowl and cream together until pale and fluffy.
4. Stir the sifted flour and ground peanuts into the creamed mixture and stir to form a dough.
5. Take walnut-sized balls of this dough and set onto an ungreased baking tray lined with parchment paper.
6. Carefully insert a slivered almond into each ball, so that it stands up.
7. When done, transfer the peanut balls to an oven pre-heated to 200°C and bake for about 10 minutes, or until the balls are just beginning to turn a golden brown.
8. Transfer to a wire rack and allow to cool completely.
9. These will keep in an air-tight tin for up to 1 week.
