Serves 4
1. Wash catfish thoroughly with hot water and lime.
2. Blend onions and chopped tomatoes.
3. Fry blended onion mixture with tomato paste for 5 minutes.
4. Then add 5 cups of water and seasonings.
5. Insert catfish and vegetables and bring to boil.
6. When almost cooked, reduce heat and re-season to taste.
7. Cover partly with lid and leave to simmer slowly. Serve with plain, boiled rice.
