Serves 4
1. You will need a greased mold or heat-proof bowl
2. Add the sugar to a pan and heat gently until melted.
3. Continue cooking, stirring constantly, until the sugar has caramelized to a golden brown. Take off the heat and pour into the base of your bowl or mould.
4. Meanwhile, pre-heat your oven to 180°C.
5. Add the egg whites and cream of tartar to a clean and dry bowl.
6. Beat until stiff and dry then fold-in the caster sugar until dissolved.
7. Beat the mixture again then turn into your mould so the meringue sits on top of the caramelized sugar.
8. Place the pudding bowl in a roasting pan half-filled with hot water.
9. Transfer to the oven and immediately turn the oven off.
10. Leave the meringue to set for 2 hours and serve with hot custard.
