Ingredients

  • 1kg white fish
  • 250ml fresh lemon juice
  • 1 garlic clove
  • 1 celery stick
  • 1 sprig of coriander (cilantro)
  • 1 large onion, finely diced
  • Salt, freshly-ground black pepper and ground cumin, to taste
  • Extra-virgin olive oil, to garnish

Directions

1. Wash and drain the fish then cube and place in a large pan. Stir in the lemon juice, garlic, chopped celery and salt to taste.

2. Cover and set aside for about 60 minutes, or until the flesh of the fish is opaque.

3. Add the diced onion, coriander and season to taste with black pepper and ground cumin.

4. Turn into a serving dish, drizzle over a little olive oil and serve with roasted maize.
