Burkina Faso
Serves 4
1. Heat the oil in a large pot.
2. Add the chicken pieces and fry for about 15 minutes or until nicely browned all over.
3. Add the tomato, rice, garlic, aubergine and water then bring to a simmer and cook for 20 minutes.
4. At this point add the cabbage and carrots.
5. Bring back to a simmer and cook for 10 minutes, or until the vegetables and chicken are tender and the sauce has thickened.
6. Serve hot with okra sauce.
