Bostwana
Serves 12
1. Combine the flour, yeast and sugar in a bowl.
2. Work in enough lukewarm water to bring the ingredients together as a soft dough (about the consistency of pizza dough is right).
3. Turn the dough into a greased bowl, cover with clingfilm (plastic wrap) and set aside to rise in a warm place for about 60 minutes.
4. Half fill a large pot with oil and heat until the oil is boiling.
5. Take a handful of the dough and press into a flat round.
6. Shape three more rounds then add the four rounds to the hot oil.
7. Fry until browned on the base then flip over and cook on the other side.
8. Once cooked, remove from the oil with a slotted spoon and drain on kitchen paper.
9. Form the next four rounds and cook in the oil.
