Ensalada de Pallares – Peru
Serves 4-6
1. Soak the Lima beans in water a day prior to when you want to prepare the dish.
2. Cook the beans in water until they are soft, then strain them and place them aside.
3. In a medium sized bowl combine the olive oil, fresh yellow aji and all the other ingredients.
4. Mix well and add the Lima beans .
5. Garnish the dish with the parsley.
