Serves 4
1. Prepare the Yellow Cake Mix according to the recipe (or buy a box of cake mix) and bake in an cake pan (about 28 x 22 x 5cm).
2. Once baked, cool the cake and cut in half crossways.
3. Use one half for the trifle, decorate the other half and serve as a cake.
4. Slice the bananas, then cut the cake half reserved for this recipe into eight pieces, splitting each one in half to give 16 fingers.
5. Arrange half the cake pieces in a 2l glass serving bowl (cut the piece to fit, if necessary).
6. Arrange half the banana slices on top then combine the pudding mix, milk an evaporated in a bowl to make a loose custard.
7. Spread half of this on top of the bananas.
8. Now add a second layer of cake pieces an bananas.
9. Top with the remaining pudding mix custard.
10. Cover and chill thoroughly for at least 4 hours.
11. When ready to serve, beat together the whipping cream and sugar until stiff.
12. Use to top the cake, decorate with slivered almonds and maraschino cherries then serve.
