Serves 4
1. Melt the butter in a pan and use this to cook the onion and tomatoes on low heat until the onions have softened (about 8 minutes).
2. Add the crab or lobster meat, cut into bite-sized pieces along with the ginger, pepper, salt and water. Bring to a boil, reduce to a simmer and cook gently for 15 minutes.
3. Serve immediately on a bed of rice.
