Serves 2-3
1. Into a large pot, put the margarine, and when it is hot but not smoking, add the chopped onion.
2. Simmer over low heat for 10 minutes.
3. Add the mashed tomatoes, salt, sugar, thyme and pepper.
4. Simmer down until sauce is thick. Add the chicken to the sauce and stir well.
5. Simmer for 20 minutes. Add chicken broth and rice.
6. Cover and simmer over the lowest heat. Stir once.
