Ingredients

  • 1 chicken, cut into serving-sized pieces
  • 1 large onion, chopped
  • 2 large tomatoes, diced
  • 300g peanuts, crushed in a pestle and mortar
  • 50ml palm oil
  • Salt to taste
  • 2 red chillies, chopped

Directions

1. Season the chicken with salt and chili then set aside.

2. Meanwhile fry the onion in the palm oil. When soft add the chicken and fry until browned.

3. Add the crushed peanuts and tomatoes to the chicken then add enough water to just cover and mix well.

4. Bring the mixture to a boil reduce to a simmer and cook until the chicken is tender (about 40 minutes).
