Ingredients

  • 1 chicken, jointed and deboned
  • 200g peanut butter
  • 1 hot red chilli
  • 1 bunch of spring onions, washed and chopped
  • 4 onions, peeled and chopped
  • 6 tomatoes, blanched, peeled, de-seeded and chopped
  • 250ml red palm oil
  • Salt and freshly-ground black pepper

Directions

1. Place half the peanut butter in a bowl and work in a little hot water, so you have a smooth paste.

2. In the meantime, combine the chicken flesh, the remaining peanut butter, chilli, spring onions and salt in a blender.

3. Process until smooth then scoop out.

4. Take teaspoons of the meat mixture and shape into balls.

5. Heat the red palm oil in a pan, add the chicken meat balls and fry until golden brown all over.

6. As soon as they are nicely cooked add the onions, tomatoes and diluted peanut butter.

7. Season to taste with salt and black pepper then bring to a boil.

8. Cover the pan and cook over low heat for 15 minutes.

9. Turn the mixture into a serving dish and serve immediately.
