Ingredients

  • 1 Chicken, whole cut up into 12 pieces
  • 2 Cups Grits
  • 2 Cups ground rice
  • 1 Can coconut milks
  • 1/2 cup vegetable oil
  • 2 Tablespoons chicken base
  • Achiote (Achote) powder (use sparingly for color and flavor ony)
  • 2 Cloves garlic, minced

Serves 3-4

Directions

1. Brown chicken in 1.5 gal. stock pot with oil.

2. Add coconut milk, chicken base, achote and garlic to pot.

3. Add prepared grits and let simmer for 8 minutes.

4. Add more grits if you want a thicker gravy.

5. Add salt and pepper to taste.

6. Serve over steamed rice or by itself.

7. Serve with finadene sauce as well.
