Serves 4
1. Mash the boiled cassava until smooth. Add the eggs, sugar and salt and blend well to combine.
2. Shape the resultant mixture into balls (about 50g apiece) and chill in the refrigerator for at least 40 minutes.
3. Heat oil in a deep fryer, add the cassava balls a few at a time and fry until nicely browned all over.
4. Serve
