Serves 4
1. Heat the oil in a saucepan and add the onion, carrot, garlic and scotch bonnet pepper.
2. Saute over medium heat for about 7 minutes.
3. Stir in the rice, water, coconut milk, beans and seasonings.
4. Cover and cook over medium heat for 15 to 20 minutes.
5. When the rice is done, transfer to a serving bowl.
6. Fluff the rice and serve hot.
