Cape-Verde
Serves 4
1. Add the brown sugar to a large frying pan and toast until the sugar just begins to scorch.
2. Stir-in the freshly-grated coconut and carefully add 5 tbsp water.
3. Stir to combine then add the remaining sugar.
4. Cook until the sugar has dissolved and the mixture thickens.
5. Take off the heat then stir-in the lemon zest.
6. Transfer to a mortar and pound the mixture well for 5 minutes.
7. Immediately place on a buttered surface and flatten out to about 2cm thick.
8. Cut into squares with a sharp knife then set aside to harden completely.
