Serves 4
1. Clean the chicken and cut it up (season with herbs if desired) and allow to sit and infuse for 15 minutes, at the least season with black pepper.
2. Heat the oil in a frying pan and brown the chicken, onions and garlic until the onion becomes soft.
3. Then add the chilli and fry for a few minutes more before adding the tomatoes and shallot.
4. Cook for five minutes then add the cabbage.
5. Season with salt to taste and cook for a further 20 minutes or until the chicken is tender.
6. Add the tomato paste at this point and cook for a further 5 minutes.
