Burkina Faso/Senegal
Serves 4
1. Cut the chicken into serving-sized pieces and place in a bowl.
2. Take half the onions and chop.
3. Mix these with the chicken then pour in the lemon juice.
4. Crush the chillies in a mortar and add these to the chicken along with salt and black pepper.
5. Stir in the mustard then slice 2 of the tomatoes and add these.
6. Cover and set aside to marinate for 30 minutes.
7. Slice the remaining onions into rings and crush the remaining tomatoes.
8. When the chicken has marinated sufficiently, remove the chicken pieces from the marinade (reserve the marinade itself).
9. Heat the oil in a cooking pot.
10. Add the onion and the chicken pieces and fry for about 5 minutes, or until the chicken is browned.
11. Pour in the reserved marinade and add the crushed tomatoes.
12. Bring to a simmer and cook for about 40 minutes, or until the chicken pieces are tender and cooked through.
13. Serve hot, accompanied by rice
14. You can prepare fish or meat yassa in the same way.
