Ingredients

  • 2 cups milk
  • 4-8 slices of bread, spread with margarine and cut into cubes
  • 2 eggs
  • 1/4 tsp lemon/lime rind
  • brown sugar to taste
  • 1 tsp vanilla essence

Directions

1. Grease pudding dish, place buttered bread cubes in a bowl, pour on milk, sugar, rind and essence, fold lightly.

2. Add beaten eggs, fold.

3. Place half of the mixture into a greased dish, spread with favourite dried fruits (including the antigua black pineapple), pour the remainder of the mixture in.

4. Place in a preheated over 250 to 275 degrees F. Bake until set.
