Serves 4-6
1. Sauté onions and garlic in olive oil.
2. Add ground beef, cilantro and oregano and cook until brown.
3. It should be rather dry, not very much liquid at all.
4. Remove from heat. Add olives and chopped eggs.
1. Fill each panqueca with this mixture and roll it up.
2. Put panquecas together in a large Pyrex.
3. Cover with tomato sauce, sprinkle with grated parmesan cheese, and warm in oven or microwave.
4. Serve piping hot with white rice and green salad.
